Oregano juice is obtained at the oregano oil production process via steam distillation. Essential oil is removed from oregano plants with steam and then this mixture condensate at the cooling stage. At this stage the oil is accumulated at the upper part of water. This valuable water, just under the oregano oil is used for Oregano Hydrosols production. After finishing production process, oregano oil is removed from water and water is transferred to the settling tanks. After a time, this water, called as Oregano Hydrosols, is ready to packaging and delivering to the customers.

Oregano water contains water-soluble components of the oil which mainly consist of the oxygenated components. Some of the polyoxygenated components may not even be present in the oil. Therefore, the distillate may have different biological properties than the oil (S. Aydin, K. H. C. Baser, and Y.
